If you’re looking for a quick and easy treat, consider these toffee cookie bars. The recipe is simple and the taste is decadent.

Deceptively Easy Toffee Cookie Bars – Ingredients

Graham Crackers (try to buy the square crackers instead of the rectangles. If you buy the rectangles, break them into squares. It’ll be easier to cut, serve and eat)

  • 8 oz chocolate covered toffee bits – Heath toffee bits works perfectly.
  • 1 1/2 cups chopped almonds
  • 1/2 cup sugar
  • 1 cup unsalted butter
  • 4 ounces (1 bar) bittersweet chocolate, chopped. I like Ghiradelli
  • 1/2 to 1 tsp kosher salt

Cherry Chocolate Brownies

White Chocolate Macadamia Nut Cookies

Okay, so I must admit I am not a fan of white chocolate. However, my children love it. And who am I to turn down an offer from my children to make cookies?!

White Chocolate Macadamia Nut Cookies – Ingredients:

  • 2 cups all purpose flour
  • 1/2 tsp baking soda
  • pinch of salt
  • 3/4 cup melted unsalted butter
  • 1 cup light brown sugar – packed
  • 2 eggs (1 full egg and 1 egg yolk)
  • 1 tbsp vanilla extract (yes a full tablespoon of pure vanilla extract. I know it is expensive but it makes the cookie.)

Gooey Double Chocolate Nutella Cookies

First, know that I’m eating these cookies as I type. They’re that good! They’re a bit involved so if you want to whip up a batch of cookies and eat them right away, this isn’t the recipe for you.

Candied Ginger Snap Cookies

Love ginger cookies?

These ginger cookies may be the best you’ve ever tasted. And…they’re easy to make.

They’re also quite versatile. You can use cookie cutters, shape them in logs and cut off the roll and you can frost them. I’ve included a tasty lemon glaze recipe which matches the cookies quite well.

Candied Ginger Snap Cookies Ingredients:

  • 2 cups all purpose flour
  • 1/2 teaspoon baking powder
  • 3/4 cup unsalted butter
  • 1/2 teaspoon salt
  • 1 cup light brown sugar (packed)
  • 1/2 cup candied ginger finely chopped
  • 1 egg
  • 2 tablespoons vanilla (Pure not imitation if you can afford it.)

Peanut Butter Sandwich Cookies

If you love peanut butter try this recipe. These cookies are superior!

The recipe is adapted from a Martha Stewart Recipe found on her iPad application. (I’d link to it but I couldn’t find it anywhere else online.)

The major change in the recipe is in the filling. I’m allergic to dairy. The filling calls for heavy cream. I substituted soy milk and they turned out beautifully. I suppose if you could find soy cream then that’d work too. They do need to be kept in the refrigerator though so the filling hardens. They are absolutely delicious.

Peanut Butter Sandwich Cookie Ingredients:

  • 2 cups flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 stick unsalted butter at room temperature
  • 1 cup brown sugar
  • 1 cup smooth peanut butter – room temperature. Natural pb works best.

Cowboy Cookies (With a twist)- Yee Haw!

The traditional Cowboy cookie has pecans, semi-sweet chocolate chips and milk chocolate chips.

This modern version of the recipe swaps out the milk chocolate and semi-sweet chocolate with dark chocolate. The pecans are swapped for almonds. It’s a slightly more grown up taste and a bit healthier too. The dark chocolate has more flavenoids and the almonds have a few more nutrients than pecans.

Cowboy Cookie Ingredients:

  • 1/2 cup all purpose flour
  • 1/4 cup whole wheat flour
  • 3/4 tsp baking soda
  • 3/4 tsp baking powder
  • 1/2 teaspoon cinnamon
  • 1/2 tsp salt
  • 1/2 cup sugar
  • 2/3 stick of butter (6 tablespoons)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 cup of dark chocolate chunks (You can also choose 1/2 cup semi-sweet and 1/2 cup dark chocolate)
  • 1 cup rolled oats
  • 1/2 cup chopped almonds

Raspberry Buttercream Frosting – for sugar cookies

My eldest daughter decided to bake sugar cookies for her Oklahoma! cast mates on Valentine’s day. She baked lemon sugar cookies and then found a separate raspberry frosting to top them.

The frosting was delicious! (Instead of lemon sugar cookies, I recommend Basic Sugar Cookies.

Raspberry Sugar Cookie Frosting Ingredients:

  • 1 cup raspberries – wash, dry and then puree them. Push the puree through a sieve to remove seeds.
  • 1 cup of unsalted butter (2 sticks) room temperature
  • pinch of salt
  • 1/2 cup shortening
  • 1 tsp vanilla extract
  • 3 cups powdered sugar
  • 3 tbs cold milk

Lemon Biscotti – Frosting Optional

I love a good lemon cookie. I mean I REALLY love a good lemon cookie. I made hazelnut biscotti the other day and it was such a nice treat to have in the morning that I went on the hunt for a good lemon biscotti recipe. Had trouble finding one but was able to modify a recipe I found on MyRecipes.com. The recipe on MyRecipes is a good one, it just wasn’t lemony enough for me.

Ingredients:

  • 2 3/4 cups all purpose flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1 tbs freshly grated lemon peel
  • 2 tbs freshly squeezed lemon juice
  • 1 tbs lemon extract
  • 1 tbs canola oil
  • 3 large eggs

FROSTING

  • 1 cup powdered sugar
  • 1 tbs lemon juice
  • Water, milk, sour cream or lemon extract for extra flavoring – optional
